Jump on the back of a local's motorbike on Moyo Island to visit the beautyful Lady Diana waterfalls and swim in the natural turquoise pools; assist marine biologists with their study of whale sharks - detailing population numbers and new migration routes; see fishermen building an incredible cargo-carrying phinisi, similar in design to our fleet of yachts: Rascal, Rebel and Rogue; go kayaking in a stunning lagoon set within the 300m-high crater walls of the extinct Satonda volcano.

WILDLIFE HIGHLIGHT: MEET THE WORLD'S LARGEST FISH

Measuring nine-to-12 metres (30-40 feet), the whale shark is the thrid largest creature in the ocean - dwarfed only by the blue and fin whales. We snorkel and dive with these gentle giants near Saleh Bay in Sumbawa, where we'll likely see them trawling for small fish and plankton with their mouths wide open (they have more than 3,000 teeth arranged in over 300 seperate rows.) A fish this immerse will spend an incredible eight hours every day gulping down 10,000 gallons of water in search of food - but, rest assured, humans are never on the menu.

SIGNATURE EXPERIENCE: INDULGE YOUR TROPICAL SWEET TOOTH

Wild honey from Moyo and Sangeang is renowned throughout Indonesia for its delicate sweetness infused with the flavours of wild flowers. Collected from wild beehives found high up in the jungle canopy (locals cover their bodies with a special oil to avoid being stung), our guests can buy jars of liquid amber direct from the honey havesters - and also savour it on-board in our dressings, desserts and sundowner drinks. It's particulary delicious drizzled over hot banana pancakes with a breakfast view of the volcanic islands from where it originates.
